CHICKEN & BLUEBERRY POUND CAKE

 
How are you guys enjoying Sunday afternoon?
 
We just baked yummy Chicken & Blueberry Pound Cake for our babies ♥
 
Always love yummy smell from the oven~
 
Cake came out a lot smaller than expected, but luckily they didn't complain about it. :-P
 
All that matter is the taste, isn't it? Heehee...
 
 
♥ You will need ♥
 
Organic Wholegrain Brown Rice Flour
Organic Coconut Flour
Organic Chicken Breast
Blueberry
Egg
Cream Cheese (Room temperature)
Pure Honey
Coconut Oil
 
 
Preheat your oven at 175°C.
 
In an electornic mixer, beat cream cheese & pure honey until soft and fluffy, then add a spoon of coconut oil.
 
Add 2 eggs, one at a time, beating until combined after each addition and scraping down the sides of the bowl as needed.
 
Sift Wholegrain Brown Rice Flour with Coconut flour, then add to the cream cheese mixture. Do not overmix. If the batter is too thick, add little bit of water. Should be a bit thicker than pancake mix. ;)
 
Add 1/3 of mixture to pound cake pan, then add sliced organic chicken breast, then another 1/3 of batter, then blueberries, and top with rest of 1/3 of batter.
 
Bake until a cake tester comes out clean, about 60 minutes. Transfer pan to a rack to cool 10 minutes. Turn out cake from pan and cool completely on the rack.
 
If you have leftover, put them in airtight container and refrigerate them. Try to consume within few days.
